Mini Vegan Cherry Cheesecakes

Celebrate summer with cool vegan cherry cheesecakes. These are the perfect bite-size dessert for any party, holiday or special occasion.



Base Ingredients:

  • 4 Medjool dates, pitted
  • 1 Tbsp cacao powder
  • 1 cup raw almonds

Cream ingredients:

  • 1 cup cashews, soaked
    1 tsp vanilla essence
  • 1 Tbsp maple syrup
  • 1 Tbsp coconut oil
  • 1 Tbsp coconut milk
  • ½ cup cherries, pitted


  1. For the base, process all base ingredients in food processor until a sticky cookie dough forms and press into mini silicon mould. Set aside.
  2. For the cream, add all cream ingredients to a high-speed blender and process until smooth and creamy.
  3. Pour over the base and place in freezer for 4 -6 hours or until set.
  4. Decorate with whipped coconut cream and more cherries and enjoy!
